because it’s JUNE already and I don’t know if it’s because I was lazy to write or just couldn’t think of anything to put for each thing I made.

oatmeal cinnamon cookies

just realized I started making mayrienda before may???

  • used this mix given to us by one of my lolas living in the States if I remember correctly. they turned out ROCK HARD only because I added a few extra minutes. the back of the pack was not kidding when it said not to overbake. but I found out that putting them in a container with a damp paper towel and keeping it outside of the ref helped soften it.

Korean sweet pancakes (호떡 or hotteok)

  • soso yummy it’s basically a chewy pancake with melted brown sugar and chopped walnuts inside
  • you can look for this ready mix at a Korean grocery or try another recipe like this one from Maangchi. I haven’t tried making it from scratch though so I might soon

Korean egg bread (계란빵 or gyeran-ppang)

Gyeran means “egg” and ppang is “bread.” though the last one is only a ppang because my sister is allergic to gyeran.

  • I was kind of sad with this one because the egg wasn’t as gooey as I expected… because when I checked it, I actually thought the melted cheese was still uncooked batter, so I kept adding minutes until I finally realized… and the egg was already fully cooked.
  • used this recipe from Maangchi. she has a lot of great korean recipes!! we followed her gimbap recipe during the pandemic (don’t put too much rice.)

takoyaki

APPROVE!!!

  • the recipe I used only needed ingredients I already had plus a few special ones, like instant miso powder from a Japanese grocery and katsuoboshi, or the fish flakes that they add on top. we also used takoyaki sauce and kewpie mayo for topping
  • you can fill it with literally anything, doesn’t even have to be octopus and it will taste amazing

double choco muffins

  • I love it because it’s literally so easy to do. for this recipe you’ll most likely already have most of the ingredients like flour or baking soda. there aren’t any special ingredients aside from yogurt (which somehow affects the texture), cocoa powder, and chocolate chips
